For The Truffle Filo Pie
  • Place your Boursin Truffle in the middle of a baking dish. Then scatter around the chopped leeks, garlic, mushrooms, thyme, cream and season to taste.
  • Cover your dish with a lid or tin foil and bake in the oven at 180C for 35min.
  • Remove dish from the oven break apart the Boursin with a spoon, and mix it well with the rest of ingredients.
  • Add in your rinsed beans into the dish and mix well again.
  • Cover your pie with the filo pastry sheets by scrunching them with your hands and laying them on top of the pie until it is completely covered.
  • Brush the filo pastry with oil or melted butter and then bake in the oven at 170C for about 20-25 minutes until golden brown. Remove from the oven and enjoy while hot!

  • A bunch of fresh thyme

  • 100g single cream

  • 700g butter beans

  • 200g filo pastry sheets

  • 2 tbsp melted butter/oil
