Tabouleh and Hummus Salad Sandwich

with Boursin Garlic & Herbs

For Sandwich
  • Preheat oven to 220ºC/200ºC fan.
  • Slice the peppers in half lengthwise, remove the stem and seeds, and place on the baking sheet cut side down.
  • Brush with some olive oil and bake for 25 minutes. Allow to cool.
  • Heat 1 Tbsp. olive oil in a small frying pan and add the garlic, cumin seeds, coriander seeds and chilli flakes. Cook for a couple of minutes to help release the aromas, then leave to one side to cool.
  • Add all the hummus ingredients for the sandwich except the Boursin and ciabatta into a food processor and blend until smooth.
  • Prepare the tabouleh by mixing all the salad ingredients together in a bowl.
  • Slice the ciabatta right through the centre and spread the hummus on the bottom slice, then top with the tabouleh.
  • Spread the Boursin cheese on the top slice, then place on top of the sandwich and slice into four pieces.
  • Serves 4
  • For Sandwich:

  • 2 red peppers

  • 2 garlic cloves, sliced

  • 1 tsp. cumin seeds

  • 1 tsp. coriander seeds

  • 1/2 tsp. chilli flakes

  • 1/2 can chickpeas, drained

  • 200g firm tofu

  • 3 Tbsp. tahini

  • Juice of 1 lemon

  • 1/2 tsp. salt or to taste

  • 100g Boursin Garlic & Herbs

  • 270g ciabatta

  • For the Tabouleh Salad:

  • 1 large tomato, finely chopped

  • 1/2 cucumber, finely chopped

  • 1/4 red onion, finely chopped

  • 30g pack parsley, finely chopped

  • Juice of 1/2 lemon

  • Drizzle of olive oil
