For The Boursin Omelette
  • Crack eggs into a strainer and beat with a fork until whites and yolks are combined. Once eggs are strained, add salt to eggs and whisk to combine.
  • In a small bowl, add Boursin and whisk it to make it fluffy.
  • In an nonstick pan over medium heat, melt 1 tablespoon butter, add eggs and season with pepper. Rapidly stir while shaking pan with the other hand. In a few minutes, the eggs will form a soft scramble. spread eggs in an even layer, scraping down any excess on sides of pan.
  • Remove pan from heat. Put the Boursin in a line down center of the omelette and fold it over so the Boursin is rolled up in the eggs.
  • Brush with remaining 1 teaspoon butter. Top with crumbled crackers and chives.
  • Serves 4

  • Handful of crackers, crushed
